Porcupine Meatballs

Soup mixture:
2-3 large cans tomato soup concentrate
1-1 1/2 large cans water (we prefer tomato juice)

Mix soup and water or juice in a bowl.

Meatballs:
1 c. uncooked rice
2# ground beef
1 onion, peeled and chopped
2 eggs
3 tsp. salt
1/2 tsp. pepper
1 tsp. chopped garlic (optional)

Combine all meatball ingredients in another large bowl.
Add 1/4-1/2 c. soup mixture.
Mix and form into balls. We use a stainless steel cookie scoop.
Place balls into cake pan(s).

Pour remaining soup mixture over formed meatballs.

Cover and bake @350 for 1 1/2 hours.
For last 15 minutes of bake time, remove cover.
