Fiesta Salsa
1 large can diced tomatoes (use fresh when in season)
1 small can kernel corn (can use MexiCorn also)
1 can of black beans
1 small can of sliced black olives
Drain liquid from the tomatoes, corn, and beans.
Put all, including black olives with liquid, in large bowl and stir
Chop red onion and a bunch of green onions and add to bowl.
(use some of the green tops)
Rough chop bunch of cilantro and add to bowl
(use parsley if you don't like cilantro)
Little salt, pepper and a about a quarter teaspoon of cumin -
sprinkle over top and stir
Mix well and store in fridge overnight.
