Soup mixture:\\ 2-3 large cans tomato soup concentrate\\ 1-1 1/2 large cans water (we prefer tomato juice)\\ \\ Mix soup and water or juice in a bowl.\\ \\ Meatballs:\\ 1 c. uncooked rice\\ 2# ground beef\\ 1 onion, peeled and chopped\\ 2 eggs\\ 3 tsp. salt\\ 1/2 tsp. pepper\\ 1 tsp. chopped garlic (optional)\\ \\ Combine all meatball ingredients in another large bowl.\\ Add 1/4-1/2 c. soup mixture. \\ Mix and form into balls. We use a stainless steel cookie scoop.\\ Place balls into cake pan(s).\\ \\ Pour remaining soup mixture over formed meatballs.\\ \\ Cover and bake @350 for 1 1/2 hours. \\ For last 15 minutes of bake time, remove cover.\\
