2-3 skinless, boneless chicken breasts diced\\ 1 large onion peeled and diced\\ 16 oz. clean sliced fresh mushrooms\\ 1 box Uncle Ben’s Original Wild Rice\\ 2-32 oz. boxes of chicken stock (3 box optional)\\ 1 pkg creamy (mushroom) wild rice soup mix\\ 1 small or 1 large can of cream of chicken mushroom condensed soup (optional)\\ ½ of a 16 oz. pkg of Lundberg Wild Blend (rice in square clear package) – well rinsed\\ black pepper\\ \\ \\ In a very large stock pot, saute a large chopped onion in a small amount of butter until a nice golden brown. \\ (I use heart healthy “Promise” that contains omega 3 oil.) \\ In a skillet, saute chopped chicken in a small amount of “Promise” until a nice golden brown. \\ Add to the large stock pot that onion is in. \\ Add 2 boxes of chicken stock. \\ Add rinsed Lundberg Wild Blend (rice). \\ Cook over medium heat for 30-40 minutes with lid on. \\ Add mushrooms, stir, \\ add Uncle Ben’s Original Wild rice, stir, \\ add pkg of wild rice soup mix, stir. \\ Cook for 20-30 minutes. \\ If not creamy enough, add 1 small or 1 large can of cream of chicken mushroom condensed soup. \\ Or add even a third box of chicken stock. \\ Add black pepper. \\ All to taste.\\
